My husband, who is a bottomless pit, loves to try new things and enjoys all of my culinary creations.

This is where I'll be sharing recipes, kitchen rants and photos of the things I've been slaving over.

So incredibly relevant… On a few different levels.

Here is how you make bubblegum infused vodka.
All you need if your favorite vodka and bubble gum. Like Absolut  and Double Bubble. Go with a ratio 1:1 for shots to pieces  of gum. For every shot you pour, add one piece of bubblegum. Cut the gum into small pieces to increase surface  area.  This will allow for the color and flavor of the gum to dissolve  into  the vodka faster. Depending on the size of the party you are having, you  can make this infusion as large or as small as you decide. I suggest  storing the infusion in a container that has a lid. It will take several  hours for the infusion to work.
All that is left to do is remove the gum and give the vodka a stir.

Crock pot recipes are great for those busy evenings like the one we have planned tonight. Between the hustle and bustle of errands and doctors appointments, I’ll throw this recipe together around 2 o’clock in the afternoon. By seven this evening it will have cooked on low for five hours, making the chicken deliciously juicy and tender— not to mention the perfection of the veggies below it!

This is a wonderful Spring dish. Use herbs from your own garden for that special added satisfaction.

Ingredients:

  • 2 boneless skinless chicken breasts
  • 5 cloves of garlic, finely chopped or minced
  • 1 large yellow onion
  • 2 cups fat free, low sodium chicken broth
  • zest of one lemon, grated
  • juice of two lemons
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons sea salt
  • 1 teaspoon smoked paprika
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 1 cup baby carrots
  • 2 fennel bulbs, sliced
  • 8 red potatoes, halved

Directions:

Rinse chicken breasts, pat dry and place in a plastic zip top bag. Pound with meat tenderizer until 1.5” thick, remove from bag. Mix together 1 teaspoon of salt, paprika and 1/2 teaspoon of pepper, coat chicken with spice mixture.

Add potatoes, fennel, onion and carrots to the bottom of your crock pot. Pour chicken broth and lemon juice inside, sprinkle with remaining salt and pepper.

Place chicken on top of the vegetable medley. Sprinkle herbs evenly over chicken, apply garlic and lemon zest on top. 

Cook on your crock pot’s low setting for 4-5 hours or until chicken and veggies are both tender.

Serve with a smile… and make your husband do the dishes!

Because you’ve been “slaving over this all day!”

Pork is not for everybody, I understand.

But it’s on the menu at least twice a month in our household. My husband and I enjoy the lean protein of thick cut, trimmed chops. Spice them up and you’ve got yourself an easy main course! 

Sweet ‘N Spicy Southern Syle Pork Chop Rub Recipe:

  • 2 tablespoons brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon cumin
  • 1 tablespoon salt
  • 1 tablespoon onion powder
  • 1 teaspoon ancho chili powder

Combine all ingredients in a small bowl. Pour evenly onto a paper plate. Coat all sides of your chops evenly. Let the chops sit on the counter, covered, for at least twenty minutes before cooking.

My preferred cooking method: Grill for approximately 10 minutes per side on medium heat.

Tonight’s side dishes: Roasted Brussels sprouts and cous cous.

Kiki’s Best Flank Steak Marinade Ever Recipe:
Ingredients:
2 tablespoons Dijon mustard
2 tablespoons Montreal Steak Seasoning
1/3 cup Worcestershire sauce
1/3 cup Red Wine Vinegar
Put flank steak in a large zippered plastic bag, combine all ingredients. Let marinate for up to 8 hours, preferably longer than two hours.
Add some saffron rice and a salad and you’ve got yourself an easy meal!
Make sure to pretend you slaved over it, though. That way your husband will feel obligated to do the dishes!

FIVE MINUTE MUG BROWNIES! (To make up for my rice recipe from Friday. XD)
-4 tablespoons flour-4 tablespoons sugar-4 tablespoons cocoa powder (If using hot chocolate mix, use only 2 tablespoons of sugar)-Dash of salt-2 tablespoons vegetable oil (Preferably not canola or olive)-2 tablespoons water-1/3 tablespoon vanillaOptional:-1-2 tablespoons milk (Makes brownies more fudgy)-Chocolate chips/nuts1. Mix dry ingredients in mug (Standard mug works. Double the recipe if you’re using one of those massive bowl sized mugs.)2. Add in wet ingredients3. Microwave for 2-3 minutes (Depending on the power of your microwave)4. Cool (Please cool! I know it’ll look and smell good, but it will burn your tongue!)For extra awesome, wait 5-10 minutes for it to cool, then add a layer of ice cream!

Hm, there might be brownies every day from now on. Bonus: The recipe is vegan if you skip the milk.

I have a (vegan) box mix of brownies. I do this but I basically make up the proportions (earth balance to water and mix).

Sounds delightful. :oNote to anyone going the vegan route with this recipe: replace the milk with more water. LOL
EDIT: Damned phone. Vegan =/= began. Also? Tumblr droid app? Quit erroring every time I want to edit a post, frak you.

Or just use soy, almond or rice milk. :)
